Panjiri is a traditional Indian sweet snack that is often consumed during special occasions and is also beneficial for new moms due to its nutritious ingredients. Here's a recipe for making panjiri:

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup ghee (clarified butter)
  • 1 cup powdered sugar
  • 1/2 cup semolina (sooji)
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 2 tablespoons melon seeds (optional)
  • 1 tablespoon poppy seeds (optional)
  • 1 tablespoon dried coconut flakes (optional)
  • 1 teaspoon powdered cardamom
  • 1/2 teaspoon powdered fennel seeds

Instructions:

  1. Heat a heavy-bottomed pan or kadai over medium heat and add the ghee.
  2. Once the ghee melts, add the whole wheat flour and semolina to the pan.
  3. Stir continuously and roast the flour and semolina mixture on low to medium heat until it turns golden brown. This step is crucial to achieve the desired flavor of the panjiri. It may take about 15-20 minutes.
  4. Once the mixture turns golden brown, add the chopped nuts, melon seeds, poppy seeds, and dried coconut flakes (if using). Continue to roast for another 2-3 minutes until the nuts become slightly fragrant.
  5. Turn off the heat and allow the mixture to cool for a few minutes.
  6. Add the powdered sugar, powdered cardamom, and powdered fennel seeds to the panjiri mixture. Mix well until all the ingredients are evenly combined.
  7. Let the panjiri cool completely before storing it in an airtight container.

Panjiri can be enjoyed as a snack or consumed with a glass of warm milk. It is known for its energizing properties and is believed to promote postpartum recovery. Remember to consume it in moderation and consult your healthcare provider if you have any specific dietary concerns. Enjoy!
